CrockPot Roasted Chicken
Whole roasting Chicken
2 Stalks of Celery (chopped)
2 Carrots (I used a small bag of baby carrots)
2 med. or 1 large onion quartered
2 tsp salt
1 tsp black pepper
1 tsp basil
1/2 cup chicken stock or white wine
Put veggies on the bottom of the crockpot. Place chicken on top.
Pour chicken broth/wine over veggies. Top with basil, salt and pepper.
Cover and cook on low for around 8 hours.
