6 egg yolks
1 cup maple syrup
1 cup rum
1 cup Grand Marnier
grated rind of 1 orange
1/2 cup brandy
6 cups milk
1 vanilla bean
3 cups heavy cream
6 egg whites, beaten stiff

Beat the egg yolks, maple syrup until very creamy and light. Keep beating as you ad Grand Marnier, rum and brandy. Cover and chill 2 hours. Add the vanilla bean to the milk and let it stand for the same time. After 2 hours, remove vanilla bean, and slowly add the milk while stirring to the egg yolk mixture. Whip the cream and gently fold in until it is well-blended. Then fold in the beaten egg whites. Cover and can be kept for up to 24 hours in fridge. Sprinkle with nutmeg. Leftovers can be frozen, served frozen for dessert, or thawed for drink.

Yield: About 20 servings
