Fire-Roasted Chipotle Chicken
3 frozen chicken breasts
1 jar Pace Cilantro salsa (that is all they had at the store)
1/2 can Chipotles and half the can of its sauce
1 small can El Torito fire-roasted enchilada sauce
Place all ingredients in the crockpot. Cook on high for 3 hours and then turn to low for 2 1/2 hours. Add 1 cup plain, white, uncooked rice when turning the crockpot to low setting.
Cook's Notes: The rice is pretty spicy, so don't give it to the kids!
