Do-it-Yourself Fortune Cookies
2 eggs
1/2 cup sugar
1 tsp vanilla extract or 1/2 tsp almond extract
1/4 cup vegetable oil
1/2 cup cornstarch
1/4 cup water
Beat the eggs in an electric mixer. Add the sugar and beat again at high speed until mixture is thick
and foamy. Stir in the extract and fold in the oil. In a separate bowl, combine the water and a small
amount of cornstarch. Stir together until smooth, then add to the rest of the egg mixture.
Heat a griddle over medium heat (we used an electric skillet) then drop one Tablespoonful of
batter, spreading them with the back of the spoon into four inch circles. Cook about 2 1/2 minutes
on each side, turning with a spatula or until the cookies are golden with lightly browned edges.
Working with one cookie at a time, remove them from the griddle, place the fortune in the cookies
centers, then pinch the cookie edges together and pull the corners towards each other for the proper
shape. (watch your fingers as they are hot.)
