German Potato Salad
3 lb. potatoes
1/4 lb. bacon
2 eggs
3/4 cup vinegar
1 cup sugar
salt & pepper (to taste)
Boil potatoes until done but still firm. Cool slightly, peel and slice.
Snip bacon with kitchen shears (or cut with a knife) and brown in skillet.
Drain. Add egg and lightly cook. Add to potatoes. Add sugar, salt & pepper
and pour vinegar over. Toss. Best when made a day ahead so flavors can mingle
and then set out about 15 minutes prior to serving.
This recipe has been in our family for generations and is a favorite at picnics.
