Meringue Ghosts
3 egg whites
3/4 cup instant dissolving sugar(sometimes called fruit sugar) - if you can't find this just blend in blender regular sugar, measure after blending
6 oz choc chips for eyes
Beat egg whites until opaque. Add sugar gradually, beating constantly. Beat until peaks form (this can take a long time) Place meringue in piping tube: pipe on to cookie sheets lined with parchment paper, making ghost like shapes with the point in the air. Place 2 chocolate chips in each for eyes.
Bake in preheated 300° oven about 30 minutes. Do not brown
Cook's Notes: I had to do a few practice ones to get the shape right, but they looked really cute, and the kids liked them.
