Hummus
1 can chick peas, drained
2/3 cup roasted tahini (sesame seed) paste
4 large cloves of garlic
2 tsp ground cumin
1 dash cayenne pepper, one more if you like
juice of two lemons
1/2 to 2/3 cup extra virgin olive oil, depending on the creamy consistency you like
Using food processor, add one can chick peas and garlic, pulse a bit to chop them up. Add tahini, cumin, pepper, lemon and pulse to mix. Slowly pour through the opening of the processor, the olive oil and pulse to mix. You may have to use a spatula to scrape the sides a few times. Blend away until creamy. Enjoy with toasted pita bread or toasted baquettes. Brush olive oil on pita wedges or bread slices and toast in oven.
