Jamacian Coconut and Ginger Bread
1 1/4 cups milk
3 Tbsp unsalted butter
2 Tbsp honey
2 tsp active dry yeast
3 cups bread flour
1 1 /2 Tbsp chopped fresh ginger
1 tsp salt
3/4 cup flaked coconut
1. Scald milk, remove from heat; Stir in butter and honey. Let cool to room temperture.
2. Add milk mixture and all remaining ingredients except the coconut in the order suggested by your
bread machine manual, and at the beeper at the end of the first kneeding add the coconut.
Cool before slicing
Yield: 1 1/2 lb loaf
