All American Lemon Bars
1 stick butter, softened
1/4 cup powdered sugar
1 cup + 2 1/2 Tbsp flour
1 cup sugar
1 tsp baking powder
pinch salt (1/8 tsp)
2 eggs
2 tsp grated lemon zest (about 1 small lemon)
1/4 cup fresh lemon juice
Preheat oven to 350°. Line 8x8 baking pan with foil and spray foil with nonstick spray.
In a medium bowl, beat butter & powdered sugar until combined. Add 1 cup flour and stir until blended.
Pat evenly into bottom of pan.
Bake crust 20 minutes or until golden. In a bowl, combine sugar, remaining flour, baking powder, salt,
eggs, lemon zest and lemon juice. Whisk until smooth; pour over crust.
Bake 20-25 min or until top is firm to to the touch. Remove to a wire rack to let cool completely. Remove from pan and
dust lightly with powdered sugar.
Caribbean bars: substitute lime juice & zest for the lemon juice and add 1/3 cup coconut. Unless you
add green food color it will look a lot like lemon bars.
