Potato Apple Howdy

1 firm, tart apple (Granny Smith or pippin)
1 3/4 Tbsp fresh lemon juice
1/2 Tbsp canola oil
2 medium-sized new red potatoes
salt-free seasoning to taste
fresh-ground pepper to taste
1/2 cup low-fat plain yogurt

Core the apples and slice them 1/8-inch thick. Put apple slices in a shallow bowl and sprinkle with lemon juice, tossing gently until the lemon juice covers each slice (this keeps the apple slices from turning brown). Put oil in a large skillet and warm over very low heat while preparing the potatoes. Don't peel em; just scrub and then slice them 1/8-inch thick. Cook the potato slices over medium-high heat until lightly browned, turn to brown the other side. Drain the apple slices and add to the potatoes, mixing carefully. Cover and cook over high heat for a minute or two. Uncover and cook another 2 minutes, turning once or twice. Serve hot topped with yogurt.
