Sweet and Sour Pork
1/4 cup unsweetened pineapple juice
1 tablespoon cornstarch
2 tablespoons brown sugar
2 tablespoons chopped fresh cilantro
2 tablespoons white vinegar
1 tablespoon low-sodium soy sauce
1/4 teaspoon crushed red pepper
1/2 pound lean boneless pork loin
1/4 teaspoon garlic powder
vegetable cooking spray
1/2 teaspoon vegetable oil
1/4 cup chopped onion
1 cup red bell pepper, strips
1/2 cup green bell pepper, strips
1 cup pineapple, coarsely choped
2 cups hot cooked rice
Combine first 7 ingredients in a small bowl; stir well, and set aside. Trim fat from pork; cut into 1-inch pieces. Sprinkle garlic powder over pork. Coat a wok or large non stick skillet with cooking spray; add oil, and place over medium-high heat until hot. Add pork; cook 3 minutes or until pork loses its pink color. Add onion; stir in peppers and pineapple. Serve over rice.
