Lime Chicken
2 1/2 cups chicken broth
1/2 cup finely chopped onion
1/2 tsp finely shredded lime peel
3 Tbs lime juice
2 Tbs honey
1 tsp salt
1/2 tsp dried mint flakes, crushed
1/8 tsp pepper
1 cup long grain rice
1 - 2 1/2 to 3 lb broiler fryer chicken, cut up
2 Tbs toasted, sliced almonds
Thin lime slices
In saucepan combine chicken broth, lime peel, lime juice, honey, salt, mint flakes and pepper; bring to a boil. Place rice in a 12x7 1/2x2 inch baking dish; pour half of the hot broth mixture over rice. Arrange chicken pieces atop rice. Pour remaining broth mixture over all. Bake, covered, in a 350 degree oven for 1 1/4 hours. Uncover. Top chicken with almonds and lime slices; bake 5 minutes more. Makes 6 servings.
Cook's Note: I used 3 large boneless, skinless chicken breasts in place of the fryer chicken and it turned out good.
