Nectarine Cobbler with Dried Cherries
3/4 cup coarsely chopped pecans
3/4 cup flour
1 1/8 tsp baking powder
3/4 cup sugar
1/2 tsp ground cinnamon
pinch freshly grated nutmeg
pinch ground ginger
1 large egg
10 medium nectarines, pitted and sliced into 1" pieces
1 3 oz. pkg. dried cherries, cut in half
6 Tbsp unsalted butter, melted
For the topping: Preheat the oven to 350 and toast the pecans on a baking sheet for about 7-10
mins. or until lightly browned. Cool. Don't turn off the oven. Butter and flour a square or oval 9"x12"
baking dish. In a medium bowl, combine the pecans, flour, baking powder, sugar, and spices. Add
egg and mix with your hands until the mixture is crumbly. Set aside. Place half the nectarines in the
prepared pan, then sprinkle on the dried cherries. Cover with remaining nectarine slices, making an
even layer. Sprinkle the nut mixture over the fruit, then drizzle on the butter evenly. Bake about
35-45 minutes or until the top is golden brown and bubbly.
