Paradise Pumpkin Pie
8 oz cream cheese, softened
1/4 cup sugar
1/2 teaspoon vanilla
1 egg
1 1/4 cup canned pumpkin
1/2 cup sugar
1 tsp cinnamon (I use more...we like it cinnamon-y)
1/4 tsp ginger
1/4 tsp nutmeg
dash salt
1 cup evaporated milk
2 eggs, slightly beaten
Combine cream cheese, 1/4 cup sugar and vanilla. Mix until well blended. Add egg, mix well. Pour into bottom of pie shell.
Combine remaining ingredients; carefully pour over cream cheese mixture.
Bake in 350° oven for 65-70 minutes or until done.
