Peach Berry Cobbler
1 cup all-purpose flour
1/2 cup white sugar
1 1/2 tsp baking powder
1/2 cup milk
1/4 cup butter or margarine, softened
1/4 cup packed brown sugar
1 Tbsp cornstarch
1/2 cup cold water
3 cups sliced fresh peaches
1 cup fresh blueberries
1 Tbsp butter or margarine
1 Tbsp lemon juice
2 Tbsp coarse granulated sugar
1/4 tsp ground nutmeg or cinnamon
Preheat oven to 350 degrees F (175 degrees C).
Stir together flour, 1/2 cup white sugar, and baking powder. Add milk and 1/4 cup butter or margarine all at once. Stir until smooth, and set batter aside.
In a medium saucepan, stir together brown sugar and cornstarch; stir in water. Add peaches and blueberries. Cook and stir over medium heat until thickened and bubbly. Add 1 tablespoon butter or margarine and lemon juice; stir until fat melts. Pour into a 1 1/2 quart ungreased casserole. Spoon batter in mounds over hot fruit; spread evenly over filling. Sprinkle with a mixture of 2 tablespoons coarse sugar and nutmeg or cinnamon.
Place casserole dish on a shallow baking pan in oven. Bake cobbler for about 35 minutes, or until bubbly and a toothpick inserted into the crust comes out clean.
Yield: 1 -1 1/2 quart casserole dish
