Penne with Peas
Cook and drain one pound box of penne pasta....while the penne is cooking:
Cook 1 medium onion, chopped, in 1 tablespoon olive oil over medium heat until tender. Add two 14 1/2 ounce cans diced tomatoes, one 10-ounce package frozen peas, thawed, 1/4 cup packed fresh basil leaves, chopped, 1/4 cup heavy cream, 1/2 teaspoon salt, and 1/2 teaspoon crushed red pepper; heat through, mix with cooked and drained pasta and top with fresh parmesan cheese.
