Peppermint Sandwich Cookies

Cookies
1 cup sugar
1 cup butter, softened
1 egg
1 tsp vanilla
2 cups flour
1/2 cup unsweetened cocoa
1/2 tsp baking soda
1/4 tsp salt
1/2 cup crushed peppermint or spearmint candies

Frosting
2 cups powdered sugar
1/4 cup butter, softened
1/2 tsp peppermint extract
several Tsp milk
1/4 cup crushed peppermint or spearmint candies

In large mixer bowl combine sugar, 1 cup butter, egg and vanilla. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Reduce speed to low; add flour, cocoa, baking soda and salt. Beat until well mixed (1 to 2 minutes). By hand, stir in candies. Divide dough in half. Shape each half into a round; flatten to 1/2". Wrap each round in plastic food wrap. Refrigerate until firm (1 to 2 hours).

Heat oven to 400°. On lightly floured surface roll out half of dough, (keep remaining dough refrigerated), to 1/8" thickness. Cut with 1" cookie cutter. Place 1" apart on cookie sheets. Bake for 6-8 minutes or until set. Cool completely.

In small mixer bowl combine powdered sugar, 1/4 cup butter and peppermint extract. Beat at medium speed, scraping bowl often and gradually adding enough milk for desired spreading consistency. Stir in crushed candies. Spread about 1/2 tsp frosting onto flat side of 1 cookie; top with second cookie, flat-side down. Squeez together gently. Repeat with remaining cookies.

Yield: 6 dozen cookies
