Pork Chops w/Mixed Dried Fruit
4 pork loin chops (I threw in 6)
1 package (8oz) mixed dried fruit
3 Tbsp brown sugar
3 Tbsp orange marmalade
2 Tbsp cider vinegar (I used red wine vinegar)
1/2 teaspoon ground ginger
1 can (5.5oz) apricot nectar (I used peach)
1 Tbsp cornstarch
2 Tbsp water
Place pork in slow cooker. Layer dried fruit evenly over pork. Mix brown sugar, marmalade, vinegar, ginger, and nectar - pour over pork and fruit. Cover and slow cook on low 6-7 hours. Remove pork and fruit from cooker and keep warm. Pour juices into 1qt saucepan. Mix cornstarch and water and add to juice. Cook on high 4-6 minutes until thick and bubbly. Serve with pork and fruit.
Cook's note: Instead of the nectar, you can use 3/4 cup of any light-colored fruit juice, such as apple, orange, or pineapple.
