Pot Stickers Pot Stickers

1 large package wonton skins
2 lbs fresh ground pork
1 can water chestnuts-chopped
1 bunch green onions-chopped
2 cloves fresh garlic
2 Tbsp soy sauce
1 tsp ground ginger

Dipping Sauce - Mix in a small bowl:
1 cup soy sauce
1 Tbsp Vinegar
1 clove fresh garlic

Stir uncooked pork, water chestnuts, onions, garlic, soy sauce, and ginger into a meatloaf like mixture.

Place approximately 2 Tbsp of pork mixture onto middle of wonton skin. Moisten edges of pastry with finger dipped into water and pull up all four corners to seal. Repeat this process until all of your meat mixture is used.

Heat 1-2 tsp of oil in a frying pan on medium heat and then fill the frying pan with pot-stickers. Let cook until the bottoms are very browned. (approximately 10-15 minutes) Turn heat down to med. low and pour 1/2-3/4 cup of water into pan and cover. Let steam for 15-20 minutes on medium-low heat until they become transparent. Serve with rice and dipping sauce.

Cook's Note: this recipe makes appx. One billion pot stickers. You may want to cut it in 1/2.
