Quick Banana Bread
Have all ingredients at about 70°
Preheat oven to 350°
Sift Together:
1 3/4 cup Sifted Flour (I use whole wheat)
2 1/4 tsp double acting baking powder
1/2 tsp salt (I use 1/4)
Blend Until Creamy:
1/3 cup Shortening (I use butter)
2/3 cup Sugar (I use brown & slightly less)
3/4 tsp grated lemon rind
Beat In:
1 to 2 beaten eggs
1 to 1 1/4 cup ripe banana pulp
Add to the sifted ingredients in about 3 equal parts to the sugar mixture. Beat the batter after each addition until smooth.
If desired fold in:
1/2 cup broken nutmeats
Place Batter in a greased bread pan. Bake the bread about an hour or until done. Cool before slicing.
Cook's notes: Personally I leave out the nuts 'cause DH doesn't like it that way. :)
