Rhubarb Muffins
3/4 cup brown sugar
1/2 cup buttermilk
1/3 cup vegetable oil
1 egg, beaten
1 tsp vanilla
2 c flour
1/2 tsp baking soda
1/2 tsp salt
1 cup diced rhubarb
1/2 cup chopped nuts (I use pecans)
Mix all ingredients just until moistened. Pour into greased muffin tins. Fill the muffin cups until 2/3 full. Sprinkle topping on each muffin (recipe follows). Bake at 375° for 20 minutes.
Topping
1/4 cup brown sugar
1/4 cup chopped nuts
1/2 tsp cinnamon
Mix and sprinkle on muffins before baking.
