Rice Pudding
3 1/2 cups milk
1/2 cup sugar, divided
1 cinnamon stick
1/2 cup long-grain rice
2 egg yolks
1/2 cup heavy or whipping cream
1 teaspoon vanilla extract
1. Heat milk, 1/4 cup sugar and cinnamon in saucepan just to boil; stir
in rice and reduce heat to low. Cover and simmer 40 minutes.
2. Whisk yolks, cream, remaining 1/4 cup sugar and vanilla in bowl. Stir
into rice mixture. Bring to boil; cook, stirring, 2 minutes. Remove
cinnamon. Cool 30 minutes.
Yield: 4 servings
