Sesame Lime Chicken
4 - 6 chicken legs, skinned
4 - 6 chicken thighs, skinned
1 medium onion, chopped
3 - 6 cloves garlic, finely chopped
1/2 cup (125 ml) fresh lime juice
1/4 cup (60 ml) soy sauce
1/4 cup (60 ml) dry sherry
1/4 cup (60 ml) orange juice
2 Tbs (30 ml) grated fresh ginger
1 Tbs (15 ml) honey or sugar
1 Tbs (15 ml) hot chili oil (optional)
3 Tbs (45 ml) sesame seeds, toasted
Combine all the ingredients except the sesame seeds in a large bowl and toss to coat the chicken thoroughly. Refrigerate covered for at least 4 hours or overnight. Place the chicken and marinade in a baking dish and bake in a preheated 400F (200C) oven for 35 to 45 minutes, until done. Sprinkle with sesame seeds immediately before serving.
Serves 4 to 6.
