Strawberry Bread
Dry Ingredients
3 cups flour
1 tsp baking soda
1 tsp salt
1 Tbsp cinnamon
2 cups sugar
Wet Ingredients
4 eggs, beaten
1 1/4 cup vegetable oil
2 cups thawed, sliced frozen strawberries(I use 2-10oz boxes, drain, reserve syrup, put strawberries
in 2 cup measure and add syrup to make 2 cups)
1 1/4 cup chopped pecans
Combine dry ingredients. Add wet ingredients and stir just till all ingredients are moistened. Gently
fold in the pecans. Spoon batter into 2 well greased 9x5x3" loaf pans. Bake at 350 for 60-70
minutes until bread tests done. Cool in pans 5 minutes; remove to wire rack to finish cooling.
