Stuffed Chicken Breasts

3 green onions, chopped
1 tablespoon olive oil
1/2 pound spinach, chopped
1/4 pound ricotta cheese or cream cheese
1/4 pound feta cheese
1 egg
3 tablespoons fine dry bread crumbs
1/4 cup grated Parmesan cheese
Dash pepper
2 tablespoons chopped parsley
1/8 teaspoon nutmeg
clove of garlic

I mixed it all together, and stuffed it into pounded-out chicken breasts. I brushed the top of the breasts with olive oil, and placed them side by side in a pyrex dish, baked them for about 30 minutes at 350°.

Next time I think I will roll them in bread crumbs first.
