Southwest Garlic Mashed Potatoes
In a large pot:
6 cloves peeled garlic
6 medium white potatoes peeled and cubed
Boil until tender.
In a separate medium pot:
Boil 2 medium sweet potatoes until tender.
Drain and peel.
Return both white and sweet potatoes to large pot and mash.
Add:
4 oz cream cheese
4 oz sour cream
Salt & Pepper to taste.
Serve with Green Chili Gravy:
1 - 10 oz can cream of mushroom soup
1 - 14 oz can chicken broth
1 - 4 oz can diced green chilies
Blend until smooth and heat to serving temperature.
