Taco Beef and Pasta

1 lb of beef round steak
2 cups (6 oz.) uncooked rotini pasta
1 jar (16 oz.) prepared mild or medium chunky salsa
1 can (15-16 oz.) black beans, rinsed and drained
Seasoning:
1 packet (1 1/4 oz.) taco seasoning mix
1 Tbsp chopped fresh cilantro
3 cloves garlic, crushed

1. Cook pasta according to directions.

2. Meanwhile cut beef into 1/2" wide strips, about 2" long.

3.In medium bowl, combine beef and seasoning ingredients; toss to coat.

4. Heat large non-stick skillet over medium high heat until hot. Heat 1 Tbsp olive oil, add beef (1/2 at a time) and stir fry 1 minute or until outside surface is no longer pink. (Do not overcook.) Remove with slotted spoon.

5. In same skillet; combine cooked pasta, salsa, beans, and 1/2 cup water; cook 4 to 5 minutes or until heated through stirring occasionally. Return beef to skillet, stir to combine.

Serve immediately.

Cook's Note: Since I have two big eaters, I used a bit more pasta and a 24 oz jar of salsa instead of the 16 oz.
