Thai Chicken

4 chicken breasts, cut in half
4-5 green onions, sliced
1 can coconut milk
1/4 - 1/2 teaspoon turmeric
1 teaspoon grated ginger
1/2 teaspoon red pepper flakes
1 8oz can pineapple chunks
2 teaspoon cornstarch
2 teaspoon water
1/2 cup chopped peanuts

Toss chicken into crockpot. Add coconut milk, turmeric, ginger, pepper flakes. Cook on low 4-5 hours. Then turn on high, add pineapple. Mix cornstarch and water, and add to crockpot, cook about 10-15 minutes (until sauce is thickened). Serve over rice and sprinkle peanuts over top.

Cook's Note: I used ramen noodles instead of rice.
