White Cake

2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1/2 cup shortening
1 3/4 cup sugar
2 tsp vanilla
4 egg whites
1 3/4 cups buttermilk
1 cup flaked coconut

Grease and lightly flour two 8 or 9 inch round pans or one 13x9 baking pan.

In large mixing bowl, beat shortening with an electric mixer on med-high for 30 sec. Add sugar and vanilla; beat until well combined. Add egg whites one at a time, beating well after each addition. Add dry mixture and buttermilk alternatly to beaten mixture, beating on low speed after each addition, until just combined. Fold in coconut. Pour batter into prepared pans.

Bake in a 350 degree oven for 30-35 minutes untill wooden toothpick comes out clean. Cool layer cakes in pans on wire racks for 10 minutes. Remove from pans and cool thoroughly on racks.
