Cooking Hints
Never handle chiles without rubber gloves as they contain volatile oils which irritate the skin ! Place avacodo seed in the middle if guacmole and cover with the mixture to prevent darkening as it stands. Lime or lemon juice will also help to deter darkening ! To keep tortillas hot for several hours, wrap tightly in foil and place in an insulated bag or wrap the foil package in layers of newspaper ! To reheat and soften tortillas, place in an ungreased surface and rub each lightly with a damp hand before heating a few seconds.Wrapping in a damp towel and heating in the microwave 20 seconds will also soften the tortilla ! To keep tortillas hot at the table serve between two heated plates ! Don't add cold water to beans while cooking,it causes them to break open. The addition of salt toughens the skin ! Longhorn cheese is the best for enchiladas;Monterey Jack for chiles rellenos ! A chile with a pointed tip will be hotter than one that is rounded ! The real heat in a chile is in the seeds and veins;their removal will lessen the amount of heat !
