Irish Soda Bread


Oven:350 degrees. Grease a 9inch cake pan(round) Sift dry ingredients together. Using a pastry cutter, cut the butter into the flour mixture until it resembles little round balls. Blend in raisins and caraway seeds. Beat egg and buttermilk until blended. Stir the egg mixture into the dry mixture until blended. Put batter into pan and bake 50 to 55 minutes, test with toothpick. Makes 1 loaf.



Irish Potato Soup


In medium saucepan, saute potatoes, onions, carrots, pepper, dill and garlic in oil for 5 minutes. Add water, milk, bouillon powder. Then, slowly add potatoe flakes, whipping constantly. Reduce heat to low and stir occasionally for about 15 minutes or until potatoes are cooked and mixture is hot.



Irish Colcannon



Chop and steam cabbage and boil potatoes. Chop leeks and put into a saucepan with milk and simmer until tender. Drain and mash potatoes, stir in milk with leeks, cabbage and garlic.
