Ambrosia Tapioca

Yield: 6 Servings


Ingredients


1/2 c Sugar

1/4 c Quick-Cooking Tapioca

1 tsp. Salt

2 1/2 c Orange Juice

1 c Orange Sections

1/4 c Flaked Coconut


Directions

Mix sugar, tapioca, salt, and orange

juice in a 2-quart saucepan.

Let stand 5 minutes. Heat to a boil

over medium heat, stirring constantly.

Cool slightly.

Stir in orange sections.

Refrigerate at least 1 hour.

Spoon tapioca into dessert dishes;

sprinkle with coconut.
