BANANA PUDDING


{Here in East Texas this is a must at most family dinners. So, you will want to learn this recipe if you plan any southerners at your table this holiday season.}


4 ripe bananas

1/4 box vanilla wafers

1/2 cup sugar

1 cup milk

2 tablespoons cornstarch

1/8 teaspoon salt

2 eggs-beaten

1 tablespoon butter or margarine

1 teaspoon vanilla

DIRECTIONS


Peel and slice banana in oven proof dish-layering with wafers.

In saucepan,combine sugar, cornstarch and salt. Add milk.

Cook over medium heat until mixture comes to a boil, stirring constantly--

WILL STICK BAD IF YOU DON'T!!

Boil about one minute.

Blend small amount of hot mixture with beaten eggs' add to remaining hot mixture. Cook until mixture bubbles, STIRRING CONSTANTLY!!!!

Pour over the banana and wafers. Top with marshmallows or meringue.

Brown in the oven on broil till top is golden brown. Can use drain pineapple in place of bananas... then it is pineapple pudding.
