Texas Buttermilk Bisquits

2 cups all purpose flour
1/2 tsp salt
3 1/4 tsp baking powder
1 tsp sugar, optional
1/2 tsp baking soda
5 Tbsp chilled butter
7/8 cups buttermilk

Preheat oven to 500 degrees. Sift all dry ingredients
together. Add cold shortening and work all through flour with finger
tips. Every bit of flour should be combined with a bit of butter
Add buttermilk and stir vigorously until dough forms a ball.
Turn dough out onto lightly floured surface. Knead lightly
for 10 strokes. Stop just as soon as dough begins to look smooth.
Pat dough out to approximately an 8 X 7 X 3/4" rectangle.
Cut into 2 inch rounds. Place on ungreased baking sheet and bake
for 8 minutes or until lightly browned.


Texas Cornbread

3/4 cup cornmeal
1 cup flour
3 tsp baking powder
1/2 tsp salt
1 cup milk
1/4 cup honey
1 egg
2 T melted butter

Mix in order listed. Bake in shallow
pan 25 minutes at 400 degrees.
Serve with honey.


Texas Rolls

1 cup milk
1/3 cup shortening
1 tsp sugar
3 cups flour
1/3 cup sugar

1 yeast cake
1/2 cup water
2 well beaten eggs
Flour - salt

Scald milk, shortening, and sugar. Cool. Add yeast cake
to 1/2 cup of water and 1 tsp. sugar for five minutes.
Add to cooled milk mixture. Add 3 cups
flour, 2 well beaten eggs, and salt. Mix well.
Add enough flour to thicken mixture to knead well.
Work and put into a bowl. Let rise.
Work down, then put in bowl and place in refrigerator.
Roll out, let rise and cook as needed.
When ready to use, bake in a preheated 350 degree oven
for 15-20 minutes.
