Weights and Measures

Common Abbreviations

C = cup
doz. = dozen
lb. = pound
min. = minute
hr. = hour
oz. = ounce
pkg. = package
pt. = pint
qt. = quart
sq. = square
tbsp. = tablespoon
tsp. = teaspoon

Emergency Substitutions

Baking Powder, 1 tsp


Buttermilk, 1 cup



Chicken Broth, 1 cup


Corn Syrup, 1 C


Cornstarch, 1 T
(for thickening)

Egg, 1 Whole

Garlic, 1 Clove

Honey, 1 cup


Mustard, 1 tsp Dry

Onion, 1 small

Sour Cream, 1 cup

Tomato Sauce, 2 cups


Unsweetened Chocolate,
1 Sq. (1 oz.)

Whipping Cream,
1 cup whipped

1/4 tsp Baking Soda +
1/2 tsp Cream of Tarter

1 T Vinegar or Lemon Juice +
Whole Milk to make 1 C -
Let stand 5 minutes

1 Bouillon Cube Dissolved
1 Cup of Water

1 cup Granulated Sugar +
1/4 Cup Water

2 T All-Purpose Flour


2 Egg Yolks

1/8 tsp Garlic Powder

1 1/4 Cup Granulated sugar
+ 1/4 Cup Water

1 T Prepared Mustard

1 tsp Onion Powder

1 Cup Plain Yogurt

3/4 C Tomato Paste +
1 C Water

3 T Cocoa and 1/2 tsp
Shortening or 1 T Margarine

2 C Whipped Dessert
Topping
