This is my sister-in-law Tortellin Soup
When I went to Idaho, she fixed it. I tell ya, it's so good!!!
Tortellin Soup
- 1 lb Italian Sausage (Jimmy Dean)
- 1 Cup coursely chopped onion
- 2 sliced garlic cloves
- 5 to 6 Cups of beef broth
- 1/2 cup dry red wine (optional)
- 2 cups chopped tomatoes or 28 oz. can
- 1 cup thinly chopped carrots
- 1 tablespoon Basil
- 1 tablespoon Oregeno
- 3 tablespoon Parsley
- 1 1/2 Cups Zuccini
- 1 lb Fresh Tortelli (frozen works)
- 1 green pepper chopped
- Grated Parmesan Cheese
Brown and drain sausage. Put in soup pot.Add broth, wine, tomatoes w/juice,carrot, basil, and oregeno/ Bring to boil.About 30 mintues add zuccini, tortelli, parsley, and green pepper.Turn down and simmer for 30 mintues. Serve w/parmesan cheese.
