Microwave Corn Bread
3 cups whole grain corn meal
4 tablespoons baking powder
3 beaten eggs
1 jar baby fruit
1 cup frozen peas
1 cup frozen blackeye peas
1 cup cooked unhulled oat/cracked corn mix
1 medium chopped apple
Mix all ingredients together, microwave in glass baking dish for about 10
minutes on 70% until toothpick pushed in center comes out clean. Turn bread
over and microwave for 1 minute on high or until bottom is no longer moist.
Cool and cut into serving size pieces, and freeze.
