Feathered Friends Fruitcake
1 large banana (very ripe)
1/2 cup peanut butter
1 1/2 cups whole wheat flour
1/2 cup soy flour
1 cup instant oatmeal
1/4 cup wheat germ (raw or toasted)
2 tablespoons baking powder
2 cups any dried fruits (mixed)
2 1/2 cups unsweetened apple juice
1 cup unsalted chopped nuts (any variety; optional)
1. Preheat the oven to 400 degrees. In a medium sized mixing bowl,
combine the banana with the peanut butter. Use an electric mixer on
a high speed to cream these two ingredients together until completely
smooth and well blended.
2. In a separate, larger bowl, combine the flours, oatmeal, wheat
germ, and baking powder. Stir well by hand until all the ingredients
are consistently and completely mixed.
3. Chop the dried fruit into tiny bite sized chunks, by hand, using
a knife. Then add the fruit to the dry mixture, and toss so that the
fruit pieces are coated with the mixture.
4. Add the nuts if you are using them. Then scrape the
banana/peanut butter mixture into the dry mixture. Add the
unsweetened apple juice. Mix everything thoroughly by hand, by
stirring with a spoon or other utensil. Mix for several minutes, or
until all the ingredients are completely incorporated and fully
blended.
5. Prepare two 8" x 8" baking dishes or 9" round cake pans by
greasing with margarine, oil, or non-stick cooking spray. Pour the
batter into the prepared dishes, and then place them into the
preheated oven.
6. Bake for about 20 minutes, or until firm, and a toothpick
inserted into the center comes out clean. When the cakes are
finished cooking, remove them from the heat and allow them to cool
completely before serving to your pet. Leftover can be refrigerated,
or frozen until ready to use. Makes 2 fruitcakes.
