Chocolate Mint Cheesecake Bar

1 cup cold margarine or butter
1 1/4 cup unsifted flour
1 cup confectioner's sugar
1/2 cup unsweetened cocoa
1/4 tsp baking soda
8 oz package of cream cheese, softened
14 oz can of  Sweetened Condensed Milk
2 x eggs
1 1/2 tsp peppermint extract
* green or red food coloring, optional
* Chocolate Glaze - see procedure

Serves 30 bars


1. Preheat oven to 350°. In large bowl, mix flour, sugar, cocoa
and baking soda; cut in margarine until crumbly (mixture will be
dry). Press firmly on bottom of 13x9-inch baking pan. Bake 15
minutes.

2. Meanwhile, in large mixer bowl, beat cheese until fluffy.
Gradually beat in sweetened condensed milk until smooth. Add
eggs, extract and food coloring if preferred; combine well. Pour
over prepared crust.

3. Bake 20 minutes or until lightly browned around edges. Cool.
Drizzle with Chocolate Glaze. Chill. Cut into bars. Store covered
in refrigerator.

4. CHOCOLATE GLAZE: In little Saucepan, over low hear, melt 2 (1-
ounce) squares semi-sweet chocolate with 2 tablespoons margarine
or butter; stir until smooth. Take away from heat; stir in ½
teaspoon vanilla extract. Immediately drizzle over bars. (makes
about ¼ cup).
