Irish Apple Coffee Cake

1 cup cooking oil
2 large eggs
2 1/2 cup flour
1 teaspoon cinnamon
1 cup chopped nuts
2 cups sugar
1 teaspoon vanilla
2 teaspoons baking powder
1 teaspoon salt
4 cups diced apples
1 (6 oz.) pkg. butterscotch bits

Cream oil, sugar, eggs and vanilla together until
fluffy. Combine with dry ingredients and mix well. Add
nuts and apples and spread in a 9x13 inch pan that has
been lightly greased on bottom only. Sprinkle
butterscotch chips on top and bake 50-60 minutes in a
350° oven.
