Mock Lemon Cheesecake

1 c. low-fat creamed cottage cheese
1 c. low-fat sour cream (plain lowfat yogurt can be substituted)
1 (16 oz.) container ready to spread lemon frosting
1 (8 or 9-inch) graham cracker crust

Place cottage cheese in blender and blend until smooth. Empty
into mixing bowl; add sour cream and frosting. Beat until well
blended. Pour into crust and freeze overnight. This rich
cheesecake made with only 3 ingredients and graham cracker crust
will fool everyone.
It can serve 12 to 15 people, because a small slice is
sufficient.
