Preparation time: 15 minutes

Serves 4
200g (6 1/2 oz) macaroni
60g (2 oz) butter
1 onion, chopped
2 rashers bacon, chopped
1/4 cup (30 g/ 1 oz) plain flour
2 1/2 cups (600 ml/ 20 fl oz) milk
1/2 teaspoon ground nutmeg
1 1/2 cups (185g/6 oz) grated cheddar
1.- Preheat the ovenv to moderate 180C (350F/Gas 4). Grease a
1.5 litre ovenproof dish. Cook the macaroni in a large pan of
rapidly boiling water until tender, then drain.
2.- Heat the butter in a large pan and add the onion and bacon.
Stir over medium heat for 4 minutes, or until soft. Add the
flour and stir over low heat for 1 minute. Remove from the heat
and gradually add the milk. Stir until smooth. Return to medium
heat and cook, stirring, for 4 minutes or until the mixture
boils and thickens. Simmer over low heat for 1 minute. Remove
from the heat and stir in the nutmeg.
3.- Add the pasta and two thirds of the cheese. Stir until
combined, then spoon into the dish. Sprinkle with the remaining
cheese and bake for 20 minutes, or until light golden.
