Plantation Pudding

Serves: 2-4
Cooking time: 45 minutes
Oven temperature: 150C (300F)

Ingredients
1 large onion
1 cup corn kernels, frozen or fresh
2 large tomatoes
butter
salt,pepper,basil, wholemeal crumbs, fresh

Procedure
Grease a 1 litre (2 pt) casserole with butter and place
ingredients in layers, thus: onion slices, corn, tomato slices,
peper, salt and basil. Dot with butter and repeat until
ingredients are all used up. Top with crumbs and a last dot or
two of butter. bake slowly and serve in spoonfuls with a pancake
luncheon.
