Yield: 4 serves
1.5 kg (3lb) American style pork ribs
1 small onion, roughly chopped
2 cloves garlic, chopped
2 small chilies, seeded and finely chopped
2 cups (500ml?16 fl oz) tomato sauce1/4 cup ( 55 g/2 oz)
firmly packed soft brown sugar
1 1/2 cups (375 ml.12 fl oz) dark beer
1- Cut the racks of ribs into pieces, with 3 or 4 ribs in each
piece.
2- Put the onion, garlic and chili in a food processor, and
process until finely chopped. Add the tomato sauce, sugar and
beer and process until combined.
3- Place the sauce mixture into a large pan, Add the ribs and
bring to the boil. Reduce the heat and simmer for 1 hour,
partially covered, moving the ribs occasionally to ensure even
cooking.
4- Taste the sauce and add more chili if desired. Transfer the
ribs and the marinade to a shallow, nonmetallic dish, cover and
refrigerate for several hours or overnight.
5- Drain the ribs, reserving the marinade, and place on a greased
preheated barbecue or grill. Cook for about 15 minutes over high
heat, turning and brushing occasionally with the marinade. If you
like, heat the remaining marinade in a pan until boiling and
simmer for 5 minutes. Serve with the ribs.
