Bacon and Leek Pie
Ingredients

Smoky bacon |

Procedure
Turn on the over to 200 o C. Chop the bacon and fry in a hot pan. You shouldn't
need any other fat. Add the chopped onions and fry for a couple of minutes.
Pour over the cream and leave to simmer for 10 - 15 minutes. Add the chopped
leek to the cream mixture and simmer for a couple more minutes. Season
with salt and pepper and leave to cool a bit. Meanwhile roll out the pastry
and line a 25 cm round pie dish. If you don't want to cheat then make your
own pastry - every recipe book has a pastry recipe. Personally I am a very
bad pastry maker and try to avoid it if I can. Precook the pastry for about
6 minutes. Now stir in the beaten eggs to the cream mixture and pour into
the pastry base. Sprinkle with cheese cook at the bottom of the oven for
about 20 minutes.
Notes
Serve with a good crunchy green salad.
