Swamp Stew

"Eat up your stew!" as inspired by the game Simon the Sorceror. Hopefully this stew won't make you throw up...

Ingredients

(serves 4)
300 g Lean pork
50 g Lean smoked bacon or ham
Knob Margarine
1 Small leek
Onion
2 cloves Garlic
1 - 2  Carrots
Parsnip
1 Green pepper
1 stick Celery or a small piece of root celery
Some Fresh parsley
0.5 tsp Thyme Fresh is even better if you can get it
2 Bay leaves
2 dl Stella Artois Or any other pale beer
2 dl Stock Vegetable or red meat

Procedure

Melt the margarine in a saucepan and add the diced pork and bacon. Chop up the onion and leek and add to the meat, together with the crushed garlic, and leave to cook for about 5 minutes. Meanwhile chop up the carrot, parsnip, pepper and celery. Add to the meat and pour over the beer and stock. Throw in the herbs (if you can be bothered the best way to do it is to tie the herbs together in a "boquet garni" and take them out after 20 minutes, usually I just throw them in as they are...). Bring to the boil and simmer for about an hour. Mix a tablespoon of cornflour with some water and stir into the stew just before serving to thicken it up.

Notes

Serve with mashed or jacket potatoes. You can use whatever vegetables you happen to have around (that's how this recipe originated)
