In a mixing bowl, beat the egg whites until fluffy and stiff peaks form. In a separate bowl mix the
remaining ingredients together. Fold in the egg whites. Gently mix together. Cook on a hot waffle
iron until golden brown. Serve with your choice of syrup.
German Pancakes
4 eggs
1 cup milk
1 cup flour
1 tsp. vanilla
1/2 cup butter
Heat oven to 400 degrees. Place butter in a 9x13" pan. Place in oven and melt. Meanwhile in a
medium bowl, mix the eggs, milk, and vanilla. Add the flour and mix until just blended. Take the
pan out of the oven and add the batter. Bake for 20 minutes. The pancakes will puff up and be
golden brown when done. Serve with syrup or jam.
CHIFFON PUMPKIN PIE
1 single crust pie shell-baked
3 eggs, separated
1 cup sugar, divided
1 1/4 cup canned pumpkin
1/2 cup milk
1/2 tsp. salt
2 tsp. pumpkin pie spice
1 tsp. vanilla extract
1/4 cup cold water
1 envelope plain Knox gelatine
Separate eggs. Set whites aside. Place egg yolks in a small, heavy sauce
pan, or a double boiler, beat lightly. Add 1/2 cup sugar, pumplin, milk, salt, pumpkin pie spice,
and vanilla. Cook over low heat for 15 minutes, stirring constantly.
The filling should be hot enough to thicken, but it shouldn't be bubbling. Remove
saucepan from heat. Pour water into a mixing bowl, sprinkle
gelatin pwoder over watter. Let set until thick. Add hot pumpkin
mixture, mix thoroughly. Cool. While filling is cooling, whip 1/2 cup sugar and egg whites
together. Use the highest speed on the blender and beat until
the mixture is glossy and stiff. Combine the cooled pumpkin mix with the
egg whites by gently folding together with
a spoon, until creamy and blended. Pour into the cooled pie shell, smoothin
the top with a spatula, or butter knife. Chill in the refrigerator at least two
hours before serving. It is best if you can make it a few days ahead.
Apple Bread
Bread
1 cup butter, softened
1 cup sugar
1 tsp. baking soda
1 tbl. lemon juice
2 eggs
2 tsp. vanilla
2 cups flour
1/4 tsp salt
1 1/2 cups apples, peeled,
cored, sliced and coarsely chopped
Crumb Mixture
1 tsp. cinnamon
2 tbl. sugar
2 tbl. flour
2 tbl. cold butter
Preheat oven to 350.
Cream butter and sugar together. Dissolve baking soda in lemon juice.
Add baking soda mixture, eggs and vanilla to butter mixture. Beat
mixture together. Add flour and salt; mix to combine. Do not
overmix. Gently fold in prepared apples into butter mixture.
In separate bowl, combine crumb ingredients, cutting in butter to get a
coarse crumb texture. Spoon 1/2 of the batter into grease loaf pan.
Sprinkle with 1/2 crumb mixture. Spoon in remaining batter and sprinkle
with remaining crumb mixture. Press crumbs gently into surface of
batter. Bake for 65 to 75 minutes or until toothpick inserted in
center comes out clean. Cool slightly in pan. Remove bread
from pan and cool completely on cooling rack.
