BLACK BEAN-AVOCADO SALSA
2 medium avocados, peeled and diced 1/4"
1 medium-large tomato, 1/4" dice
1 small onion, fine dice
1 15oz can kernel corn, drained and rinsed
1 15oz can black beans, drained and rinsed
2 jalapeno peppers, seeded and finely diced
2 tbsp. olive oil
1 package McCormick "Produce Partners" salsa mix
1 package McCormick "Produce Partners" guacamole mix Mix all ingredients in a 2-1/2 quart mixing bowl. Cover and refrigerate at least two hours before serving. Serve with your favorite corn chips. Brand names are for illustration. There are lots of ways to add spice to this dish - plain old chili powder is fine for seasoning.
