Preparing Lentils


dry lentils, rinsed

6 cups water

1 teaspoon salt (if desired)


Bring water and salt to boil; add lentils. Bring to boil; cover and reduce heat. Cook for 20 minutes. Drain and rinse.

When preparing lentils, use 1/2 the amount of dry lentils as the recipe calls for of cooked lentils (1/2 cup of dry lentils yields 1 cup of cooked lentils).
