OYSTER STEW - UNCLE CHUCK'S RECIPE
4 tablespoons butter
1 pint oysters (selects)
3 bay leaves
6 whole cloves
6 kernels allspice
3/4 teaspoon white pepper
1/2 teaspoon salt
1 1/2 teaspoons parsley flakes
1 pint half-and-half
In a saucepan, melt butter over medium heat, add the oysters and oyster liquor. Simmer. After the edges of the oysters curl, cook 5 more minutes. Add bay leaves, cloves, allspice, pepper, salt and parsley flakes. Reduce heat to medium-low and cook for an additional 5 minutes. Add half-and-half, increase heat to halfway between medium and medium-high, and cook for 10 minutes, stirring occasionally.
